Ghost Pancakes

These healthy, delicious pancakes make the perfect spooky Saturday morning breakfast!

Ingredients:
  • 1 cup whole wheat flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup milk
  • 1 egg
  • 1 tablespoon melted coconut oil
  • 1/4 cup mashed banana
  • 1/4 cup pumpkin puree
  • 1/4 teaspoon ground cinnamon
Instructions:
  1. In a large bowl, whisk together the flour, baking powder, baking soda, and salt.
  2. In a separate bowl, whisk together the milk, egg, coconut oil, banana, pumpkin puree, and cinnamon.
  3. Pour the wet ingredients into the dry ingredients and whisk until combined.
  4. Heat a large skillet or griddle over medium heat. Brush the pan with a little coconut oil or butter.
  5. Pour 1/4 cup of batter onto the pan for each pancake. Cook for 2-3 minutes per side, or until golden brown and cooked through.
  6. To make the ghosts, use a cookie cutter to cut out ghost shapes from the pancakes. You can also use a toothpick to draw on eyes and a mouth.
  7. Serve immediately with your favorite toppings, such as maple syrup, honey, or fruit.
Tips for getting your child involved:
  • Let your child help you measure and mix the ingredients.
  • Let them choose the cookie cutter to cut out the ghost shapes.
  • Let them choose their favorite fruits and use them to decorate the ghosts
